Too Good Not To Share

One of the advantages of Facebook are the delicious recipes that come through everyday.  

I'm an oatmeal breakfast girl, and have been for about 13 years [except when eating out at restaurants]. It has reduced my cholesterol considerably, and I try preparing it various ways to keep it interesting.  A week or so ago a recipe appeared on Facebook from Barefeet in the Kitchen. It looked so good I decided to make it.   My hubby and I are both hooked on it.  


I cut the recipe in half and tweaked it to my own liking and am sharing the recipe with you. Oatmeal is healthy on its own, but when pumpkin and walnuts are added it becomes even healthier. Pumpkin not only provides fiber, but it has vitamin C and potassium for heart health.


Pumpkin Pie Oatmeal

1 1/4 cup old-fashioned oatmeal [not instant]
2 cups milk [I used 2%]
1/2 cup pumpkin puree
2 Tablespoons brown sugar
3/4 teaspoon pumpkin pie spice 
2 Tablespoons chopped walnuts to sprinkle on top
[Makes two generous servings, and one can be refrigerated for the next day.]

Combine all ingredients in large saucepan.  Bring to boil.  Reduce heat to a simmer and cook over medium-low heat for five minutes, stirring frequently.

Pour additional milk over individual servings and sprinkle with chopped walnuts.  Enjoy! It's the perfect way to start your day.

My tea of choice this morning was Harney's Queen Catherine black tea blend.

  3. That does sound good! On work days I usually eat Cheerios with yogurt (fast and easy) for breakfast but I'll have to try this on a Saturday. Thank you for sharing your tweaked recipe.
