A Pumpkin Treat for Tea Time

I love pumpkin.  I once did a tea titled "Fun in the Pumpkin Patch" where almost everything on the menu was pumpkin one way or another.  

So far this fall I've made two batches of Chocolate Chip Pumpkin Bread and two Pumpkin Rolls. Today I decided to share my Pumpkin Roll recipe.  I've had it for many years, and it's tried and true.   Pumpkin rolls make wonderful hostess gifts.  As a matter-of-fact, I gave one to my neighbor who recently hosted the neighborhood tea party.  They freeze beautifully, and can be kept on hand for upcoming holiday giving - if they manage to stay in the freezer that long! 


Pumpkin Roll

3 large eggs
1 cup granulated sugar
2/3 cup solid pack pumpkin [not pumpkin pie mix]
1 teaspoon lemon juice
3/4 cup flour
1 teaspoon baking powder
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 cup finely chopped walnuts

Preheat oven to 375 degrees.  Beat eggs on high speed of mixer for 5 minutes until light and fluffy.  Gradually beat in sugar.  Stir in pumpkin and lemon juice.  

Stir together flour, baking powder, spices and salt.  Fold into pumpkin mixture until well blended.

Spread into a greased jelly roll pan [or line with parchment paper].  Sprinkle top with walnuts and bake for 15 minutes.  Turn out onto a cotton dish towel sprinkled with powdered sugar.  Begin rolling from narrow end, rolling towel and cake together.   When cooled, unroll and spread with filling.

Pumpkin Roll Filling

1 cup powdered sugar
1 [8 oz.]  cream cheese, softened
4 tablespoons butter, softened
1/2 teaspoon vanilla

Beat until smooth.  Spread evenly over cake and roll up.  Wrap in Saran and chill until ready to serve.  Cut into slices and serve.  Enjoy!

  7. I love pumpkin anything, Phyllis, and in fact it's hard to beat a pumpkin pie, as far as pie goes, in my books. Your pumpkin roll not only sounds delish but it's pretty too.
