Sunday, September 15th, I hosted an engagement dinner for my granddaughter, Tiffany, and her fiancé, John. I wanted the celebration to be light, informal, and not too frilly/girly for the guys in attendance, so I went with a Mexican theme.
On Saturday I made my 'cheater's' fried ice cream. First I baked the tortilla bowls for the ice cream balls.
Then I crushed the cornflakes...
and sautéd them in butter.
Lastly I rolled the ice cream balls in the crushed cornflakes to create the fried effect. All the while sipping a cup of Harney's Hot Cinnamon Spice tea!
I wanted to put an engagement ring sugar cookie at each place setting, so the next project was cutting out the rings and baking them.
I don't quite have my decorating perfected yet for the engagement rings, so these had to suffice until I get more time to practice. At least they were able to recognize what the cookies were. Each cookie was placed in an individual cellophane bag.
We began our meal with corn chips and individual cups of seven layer dip. I got the idea on Pinterest.
Then we had Tortilla soup, Chicken Ro-tel, and Margarita punch, and we finished with the Fried Ice Cream.
