First Sunday of May 2020

I don't normally post on Sunday, but I wanted to stay in touch.  Below is a beautiful picture of Cameron Highlands tea plantations in central Malaysia that Bing provided on my screen saver today.

Are you trying any new recipes during the quarantine?  I have a good chicken pot pie recipe that I haven't made in years, but made it for dinner last night and leftovers today.

I used Jiffy pie crust mix which in addition to being quick, is very flaky.  The crease on the surface was caused from the parchment paper underneath the dough when I rolled it out.

Hot from the oven.  It's very moist inside, but not runny like commercially made individual pot pies.

There is a gravy recipe that can be poured over the top, but I opted not to make it.

These days green tea [Harney & Sons organic Citrus and Ginkgo] is in my teacup.  I've done more cooking during this quarantine than I have since my kids were living at home because we can't eat out and we haven't ordered carry-out.  Jerry said he's gained 10 lbs.  ;-)

Since we need to keep a sense of humor during this lockdown here's something I saw on Facebook recently that brought a smile to my face.

Be safe and stay well!

  1. That pot pie looks delicious. I love your green Boopie water glasses. I have clear Boopie glasses that I adore. Stay safe.
